2 cups plain flour
1 tablespoon baking powder
2 tablespoons sugar
1 teaspoon salt
1 large egg, beaten
1 cup milk
1/2 cup vegetable oil
1 TBSP dried mixed herbs
¼ cup grated sharp cheddar cheese
Mix the flour, baking powder, sugar, and salt together in a small bowl. Combine the beaten egg, milk, oil and herbs together, and add to the dry. Mix until just moist, add the grated cheese, and mix until just blended. Spoon into muffin pan, filling each cup about two-thirds full, bake for 15-20 minutes or until golden brown.
